● 0.75kg of raw beetroot
● Crushed garlic
● 1/2 large onion
● 1 apple
● 100g lentils
● 1 litre of veg stock
● Onion seeds to garnish
1. Boil the beetroot for a good 1 1/2 hours, cool, peel and dice.
2. Fry the onion and garlic with no colour then add the diced apple and lentils.
3. Fry for a further 2 minutes and add the stock and beetroot.
4. Leave to boil for 10 minutes then blend and adjust seasoning to taste. Serve with black onion seeds to garnish.
