Burger with all the trimmings!

 

Ingredients

●   Fatty beef mince
●   Lean beef mince
●   Course sea salt
●   Ground black pepper
●   Parsley, finely chopped

 

Method

To make a good quality burger you need a little fat as well as good lean beef mince
1. Take 1 part fatty beef mince to 3 parts lean mince and combine with a really good pinch of course sea salt, the parsley and pepper.
2. Leave covered in the fridge for a good hour to let the meat settle.
3. Mould into reasonable sized patties and griddle until cooked.

For added burgerliciousness, try adding pulled pork with BBQ sauce, a fried egg or battered onion rings!

Great onion rings!

 

Ingredients

For the onion rings
●   1 large white onion
●   Vegetable oil for frying

For the batter
●   225g self-rising flour
●   1 teaspoon Bi carb of soda
●   1 teaspoon baking powder
●   285ml COLD sparkling lemonade
●   Salt and pepper

 

Method

To make the batter you can use anything fizzy but we’ve used COLD lemonade
1.  Place the cold lemonade into a bowl.
2. Add the flour, soda and baking powder and whisk into a thick smooth batter.
3. Cut the onion into nice chunky rings and place into seasoned flour, then coat with the batter
3. Deep fry the onion rings in vegetable oil at 180° until golden.
4. Drain and pat dry and leave on kitchen paper until ready to serve.

Dressings

 

Ingredients

Ranch dressing
●   120g buttermilk
●   115g sour cream
●   115g mayonnaise
●   1 tablespoon finely chopped fresh parsley
●   1 teaspoon finely chopped fresh chives
●   1 teaspoon finely chopped fresh dill
●   1 teaspoon lemon juice
●   1 teaspoon Dijon mustard
●   1/2 teaspoon onion powder
●   1/2 teaspoon salt
●   1/8 teaspoon black pepper

Method

In a medium bowl, whisk together the buttermilk, sour cream and mayo. Mix in parsley, chives, dill, lemon juice, mustard, onion powder, salt and black pepper. Place in an airtight container and refrigerate for at least one hour before using. Store for up to one week in the fridge.


 

Ingredients

Chipotle Ketchup
●   35g chipotle chilli
●   5g cayenne pepper
●   10g black pepper
●   500g ketchup

Method

Combine all the above ingredients and refrigerate until serving.

 

Ingredients

Chipotle mayo
●   115g mayonnaise
●   80g sour cream
●   115g mayonnaise
●   2 chipotle chillies from 1 can of chipotles in adobo
●   2 tablespoons freshly squeezed lime juice

Method

Place mayonnaise, sour cream, lime juice and chipotles in jar of a blender. Puree until smooth and the chipotles are completely chopped. Pour into an airtight container, cover and store in the fridge until ready to use.


 

Ingredients

Classic burger sauce
●   1 teaspoon onion finely chopped
●   1 1/2 tablespoons mayonnaise
●   1 1/2 tablespoons sweet pickle relish
●   1 teaspoon yellow mustard
●   1 teaspoon sugar
●   1/4 teaspoon marmite or vegemite
●   1/4 teaspoon ground turmeric

Method

Combine all the above ingredients and refrigerate until serving.
