● 200g Garden peas
● 500g Watercress
● 200g Spinach
● 1 bunch Parsley
● 25g English radish
● Rapeseed oil
● 1 Lemon, zested and juiced
1. Defrost the peas and place in a mixing bowl.
2. Pick and wash the watercress, spinach and parsley.
3. Wash and thinly slice the radishes.
4. Mix the leaves with the peas, lightly crush the peas through your fingers to create texture.
5. Place in a serving dish, top with the radish to create colour and finish with oil, lemon juice and zest.
