● 500g mixed tomatoes
● ½ bunch rosemary
● ½ bunch parsley
● Rapeseed oil (to drizzle)
● 100g Fresh breadcrumbs
● 25g Grated parmesan
1. Thinly slice the tomatoes and place on a serving platter or dish.
2. Take the fresh rosemary and chop until fine.
3. Finely chop the flat parsley.
4. Place both herbs, breadcrumbs, parmesan and a tablespoon of rapeseed oil in a blender and mix until you get a green, flaky crumb.
5. Sprinkle over the tomatoes and drizzle with a little more oil.
