The word on the street was EAT! as a number of creative business and industry chefs descended upon the Islington Metal Works to showcase their street food talents at the finals of the B&I Catering StrEAT food awards.
Representing Blue Apple was the fantastic Salvatore, our graffiti loving Italian chef from our Woking site, who was selected from hundreds of applicants to enter the grand finals.
Chefs were asked to create their own signature street food dish as well as complete a technical challenge using ingredients supplied from a product basket. The panel of judges were looking for creativity in the presentation, preparation and cooking of the dish as well as texture, quality and flavour.
For the technical dish, we saw Salvatore produce Piri Piri chicken with lightly pickled red cabbage & apple, with buttermilk dressing and crispy fried skins served in a lettuce leaf wrap, while for the signature challenge Sal stuck to his roots and cooked with typical Italian passion a char-grilled octopus marinated in Neapolitan gremolata, served with tempura samphire drizzled with aioli in a tiger bun. Mmmm Mamma Mia!
The competition was extremely strong and the atmosphere at the venue positively buzzing as the winners were announced. Unfortunately this time was not to be Sal’s year but what an achievement to have been shortlisted from so many—with his passion for the exciting and unusual, we’re sure he’ll be back next time with even more enthusiasm and will do Blue Apple just as proud!
