Spinach and watercress soup

 

Ingredients

●   1 bag of fresh spinach
●   1 1/2 bunches of watercress
●   2100g of cooked rice
●   1/2 bunch of spring onion
●   Juice of 1/2 lemon
●   1 litre of stock
●   1/2 avocado peeled and diced

 

Method

Basically put everything in a large pan and blend until smooth. Place on the heat and bring to the boil. Season to taste.
